Tomato meatballs with strained yogurt and thyme

INGREDIENTS:

  • 100 gr. cherry tomatoes, cut in half
  • 2 spring onions, finely chopped
  • 500 gr. ripe tomatoes, finely chopped
  • 1 large onion, finely chopped
  • 1/2 bunch parsley, finely chopped
  • 1 tbsp. mint, finely chopped
  • 1 tbsp. thyme
  • 2 tbsp. strained yoghurt
  • 4-5 tbsp. flour
  • 1 tbsp. baking powder
  • 1 egg
  • salt, freshly ground pepper
  • olive oil for the pan

 

PREPARATION:

Put the chopped tomatoes and cherry tomatoes in a bowl.

Add the onions, herbs, yogurt and egg and mix. Add salt and pepper and add the flour with the baking powder.

Heat the olive oil in a non-stick pan and fry the meatballs for 3-4 minutes on each side.
